Simple Spanish Rice

Last night I discovered a bag of salad in my refrigerator that "expired" a few days ago. It only cost me .49 at Aldi, but STILL! I looked at it carefully and it still looked perfectly edible, but I knew I wasn't going to be able to eat an entire bag of salad myself! So tonight for dinner, I decided to have soft tacos. The kids absolutely LOVE when we do that, it's super-duper easy for me, and it would use up most of the salad mix (which was basic iceberg).

As I was browning the hamburger in the microwave, pulling already shredded cheese and the bagged lettuce from the refrigerator, and opening a bag of tortilla chips to go alongside (yes, I worked soooo hard on this dinner...lol), I noticed a small bowl of rice on the bottom shelf, left from dinner two nights ago. It looked so sad that I had to try and use it. And thus a successful experiment was born!

I put the rice in a microwaveable bowl and mixed in a few tablespoons of salsa, until it looked well-combined. I put it in the microwave for about 2 minutes and gave it a good stir. Only DH and I will eat anything with salsa on it, so there was the perfect amount of rice for us. It was really good! I was actually surprised that it turned out so tasty, considering it was just a whim for leftover rice.

So next time you need to do something quick and easy with leftover rice, try mixing in some salsa and heating. It was a great complement to our simple supper tonight, and used up something that otherwise might have gotten tossed.

  2. I will keep this in mind for the next time I make soft tacos. My husband loves rice in his and this would be a perfect way to use up those leftovers. Great tip!

  3. Here's what I do if I have a small amount of leftover rice (around 1 cup, little more or little less). After browning/draining my hamburger for tacos, I throw the rice in when I add the taco seasoning. My boys LOVE it and it helps stretch a pound (or however much you use) of hamburger too.
